Recipes from WIC 5

EGGS + Cheese = Yum!

Made these little treats for saturday breakfast.. Don't tell but I really made them saturday night just warmed them up this morning..

6 slices bacon, chopped or Bacon bits work well too or whatever meat you have on hand.


1 onion, chopped or onion powered to taste

3 eggs ( thank you WIC for our eggs)

Canned biscuts ( I made my own biscut from scratch)

2 cups shredded American cheese ( I just used my sliced from WIC cut into four pieces one pieces per quiche!)
 
Directions


Preheat the oven to 350 degrees F (175 degrees C). Grease muffin pan.

Place one biscut in each muffin cup or a good spoon full of biscut dough into greased muffin cups.

In a large skillet over medium heat, fry bacon and onion together for about 5 minutes, or until bacon is crisp. Drain and set aside. Or if useing bacon bits or some other meat sprinkle over biscut once they are in the pan.

In a medium bowl, beat the eggs. shredded cheese, bacon and onion. Spoon over biscuts.

Bake for 10 to 15 minutes in the preheated oven, or until the tops are lightly browned. Allow mini quiches to cool in the pan before carefully removing with a small knife or spatula.

Recipes from WIC 4

This has to be the most yummy recipes to date! Chex Muddy Buddies or Puppy chow as some call it.. One thing is for sure if you make this it won't last long in your house! It is very kid friendly but easy pleasey lemon sqeezy as my kids say to make! Great after school snack or yummy after dinner treat! Great for Partys or to pack for a long road trip! This recipe is copied from Chex cereal web site.

 9 cups Corn Chex®, Rice Chex®, Wheat Chex® or Chocolate Chex® cereal (or combination)


1 cup semisweet chocolate chips

1/2 cup peanut butter

1/4 cup butter or margarine

1 teaspoon vanilla

1 1/2 cups powdered sugar

Substitution

Peanut butter and chocolate are a favorite flavor combo, but peanut butter lovers can substitute peanut butter chips for the chocolate chips to intensify that flavor.
 I also add other yummy things like bite-size pretzels and what ever kind odds and ends of cereal I have floating around the house. Great way to use up cereal that may not be the house hold favoite but cover it in peanut butter and chocolate and watch it go!

1. Into large bowl, measure cereal; set aside.

2. In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.

3. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator. 

It is much better cold!!! but i would eat this anywhere anytime.. just like Sam likes green eggs and ham! hehehehe
